If you have been following our Instagram story over the last few days, you would have noticed our yummy homemade Vegan Hummus recipe :) It was sooooooo tasty, healthy and my kids loved it! A perfect afternoon snack with some carrot sticks or brown rice crackers. Some of you asked for the recipe so here it is:
1 can chickpeas
1/4 cup fresh lemon juice or 1 large lemon
1/4 cup hulled tahini (I use Mayver's which is dairy, gluten and cholesterol free. Macro Organics also have a great Hulled tahini).
1 small garlic clove finely chopped
1/2 teaspoon black pepper
Start with 1/2 Himalayan Pink salt, then add more to taste if needed
You can also play around with flavours, adding a little bit of cumin or paprika!
1. In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute, scrape the sides and bottom of the bowl then process for 30 seconds more. This extra time helps “whip” or “cream” the tahini, making the hummus smooth and creamy.
2. Add the garlic, pepper, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended.
3. Open, drain, and rinse the chickpeas. Add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and quite smooth, this takes about 1 to 2 minutes.
If your tahini is too thick or still a little chunky from the chickpeas, add a little bit of water and keep processing. It takes a little time to get the consistency right, but it is definitely worth the wait!!
